Cubeb berries, at times termed as Java pepper or "tail", are an alternative to black pepper, sporting a small stem-like tail. The smell of berries cubeb is amazing -turpentine-like, with hints of camphor plus nutmeg. Cubeb berries beget this piney taste when fresh, except when heated, its flavor is also tender and pleasant- implicative of allspice. Cubeb berries are natural to Java together with Sumatra (now Indonesia) and came to Europe via India through trade with merchants of Arab spices. Interestingly [or not], Cubeb was also at the same time, I thought that the people of Europe to be repugnant to the demons as it was with the people of China. Java pepper is further used to improve the zest of savory recipes such as soups plus stews. In Moroccan menu, cubeb is practiced in savory and sweet dishes as mark outs, little diamonds of semolina with honey and dates.
